Spicy Star-Fruit Salad With Mint
- 1/4 cup fresh coconut juice or water
- 1 teaspoon rice-wine vinegar
- 1 teaspoon sugar
- 1 red Thai chili, seeded and finely chopped
- 2 cloves garlic, peeled and minced
- 1 tablespoon lime juice
- 1 tablespoon fish sauce (see note)
- 2 star fruits, thinly sliced
- 1 unripe banana, peeled and thinly sliced
- 1 cucumber, peeled, seeded and thinly sliced
- 1/2 cup chopped mint leaves
- In a medium bowl, whisk together the coconut juice, vinegar, sugar, chili, garlic, lime juice and fish sauce.
- Add the remaining ingredients and toss to coat.
- Serve with fragrant beef (see recipe).
