Creamed New Potatoes And Peas Recipe

  1. In large saucepan combine potatoes and salt.
  2. Add in water to cover and bring to a boil over high heat.
  3. Cook till fork-tender, about 15-20 min.
  4. Drain.
  5. Sauce: In medium saucepan heat butter over low heat.
  6. Stir in flour and whisk till smooth.
  7. Cook 2-3 min, stirring occasionally.
  8. Gradually stir in chicken broth, lowfat milk, salt and pepper.
  9. Cook over medium heat till thick and smooth, stirring frequently, about 5 min.
  10. Add in peas and parsley; heat through.
  11. Spoon potatoes into serving dish.
  12. Makes 6 servings, about 245 calories each.
