Easy Breezy Homemade Veggie Soup

  1. In large Dutch oven add veggie juice, stock and water and bouillon cubes.
  2. Bring to boil and cook for 15 minutes.
  3. Then add lentils and cook for 10 minutes on medium heat.
  4. Add potatoes, onion and cabbage (if using).
  5. Cook for 10 minutes then add the frozen mixed veggies.
  6. Cook until desired tenderness in vegetables.
  7. Serve with crusty bread or homemade biscuits and a green salad.
  8. This recipe is absolutely delish!
