Meat Balls In Sour Cream Recipe
- 2 lbs. grnd beef
- 1/2 c. minced onion
- 1/3 c. minced pimiento stuffed olives
- 2 Large eggs, slightly beaten
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 c. butter
- 2 tbsp. flour
- 1/2 c. water
- 1 teaspoon lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1 c. dairy lowfat sour cream
- Lightly mix beef, onion, olives, Large eggs, salt and pepper just till blended; shape in 24 meat balls.
- In a skillet heat butter; brown meat balls slowly on all sides; cook till done.
- Place in shallow 1 qt casserole.
- Pour off fat in skillet reserving 2 Tbsp.
- ; blend in flour.
- Add in water, lemon juice, Worcestershire, paprika and salt; cook over medium heat, stirring constantly, till thickened.
- Cook 2 min longer.
- Remove from heat; carefully blend in lowfat sour cream; pour over meat balls.
- Bake at 350 degrees for 10 to 15 min.
- Makes 8 servings.
