Kartoffelkratzet - Kartoffelschmarren

• 1 pound potatoes cooked in their jackets and peeled
• 2 large eggs
• 1 tablespoon sour cream
• 3 tablespoons flour, all-purpose
• 1 dash salt
• 1 tablespoon sugar
• 1/2 cup lard

1. Grate the potatoes, then combine with the other ingredients to a viscous mixture.
2. Fry the potato mixture in the hot lard.
3. This used to be served with rhubarb.
