Chicken and Potato Salad with Basil

  1. Cook the potatoes in the microwave for about 15 minutes at 500w.
  2. Once the potatoes are cooked, peel and quarter them.
  3. Boil the chicken and cut into bite-size pieces.
  4. Cut the bacon into bite-size pieces.
  5. Cook the bacon in a frying pan.
  6. Finely cut the basil and combine with all the marked ingredients.
  7. (You could also use a food processor.)
  8. Combine the basil sauce with the potatoes and chicken.
  9. Add in the cooked bacon, red kidney beans and chickpeas.
  10. Finished.
