Grilled Chicken And Broccoli(Low Carb)
- 3/4 lb. chicken cutlets, pounded to 1/4 in. thick
- 1- 1/2 tsp. Dijon mustard
- juice and pulp of 1lime
- 2 tsp. olive oil
- 1/2 TBSP. finely slivered red bell pepper
- 2 TBSP. chopped water chestnuts
- 4 c. chopped broccoli, steamed
- Grated Parmesan cheese
- Brush the chicken with the mustard, and grill or broil until cooked through, about 4 minutes on a side.
- Slice into thin strips. Whisk together the lime juice and pulp, oil, thyme, pepper, and water chestnuts.
- Arrange the broccoli and chicken on a serving plate.
- Sprinkle with the lime dressing and Parmesan.
- Serve warm. Makes 4 servings.
