Orange Gelatin Salad
- 1 cup diced mandarin orange section
- 14 cup sugar
- cold water
- 3 ounces orange gelatin, pkg
- 1 cup hot water
- 3 tablespoons chopped maraschino cherries
- 1 cup canned pineapple tidbits, drained and cut in half
- 1 tablespoon grated orange rind
- Combine oranges and sugar and let stand 10 minutes.
- Drain and add cold water to make 1 cup of "juice".
- Dissolve gelatin in hot water.
- Add orange juice, water, and orange rind.
- Chill until slightly thickened.
- Then fold in fruits.
- Refrigerate.
