Apricots 'N Cream Cookies

  1. Heat oven to 350F.
  2. Combine sugar and butter in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add sour cream, egg and almond flavoring; continue beating until well mixed.
  5. Add flour, baking soda and salt; beat at low speed, scraping bowl often, until well mixed.
  6. Stir in chopped apricots.
  7. Drop dough by tablespoonfuls, 2 inches apart, onto ungreased cookie sheets.
  8. Sprinkle with sugar and almonds, if desired.
  9. Bake 10-12 minutes or until lightly browned.
