Green Beans with Onion
- 1 tablespoon extra-virgin olive oil, eyeball it
- 1 tablespoon butter
- 1 small onion, chopped
- 1 cup chicken broth
- 1 to 1 1/4 pounds trimmed green beans many markets have trimmed raw beans in packages in the fresh produce department in 1 pound packages
- Salt
- To a medium pan over medium heat add extra-virgin olive oil and butter and onion.
- Saute onion 3 minutes, add broth and bring to a boil.
- Add beans, season with salt and cover pan and simmer 8 minutes, until tender.
