Polenta with Chives
- 4 cups water
- 1 cup instant polenta
- 2 tablespoons unsalted butter
- Salt and freshly ground pepper
- 2 tablespoons snipped chives
- In a saucepan, bring the water to a boil.
- Gradually whisk in the polenta; return to a boil.
- Cook over moderately low heat, stirring, until smooth, about 3 minutes.
- Remove from the heat.
- Whisk in the butter, season with salt and pepper, stir in the chives and serve.
