Aderezo De Mange Y Frijoles Negros (Mango Black Bean Relish) Recipe
- 2 x limes seeded and halved juice of 1 fresh lime
- 1 c. pureed mango
- 1/3 c. diced mango
- 1/2 c. diced pink papaya
- 1/2 c. cooked and liquid removed black beans
- 1/2 c. peeled and diced jicama
- 1/4 c. finely minced cucumber peel
- 1/4 c. diced red bell pepper
- 1/4 c. diced yellow bell pepper
- 1/4 c. diced red onion
- 1/2 bn fresh cilantro finely minced
- 1/2 x Scotch bonnet pepper seeded and chopped
- 1 1/2 tsp extra-virgin extra virgin olive oil salt and freshly grnd black pepper to taste
- Place limes in a nonreactive saucepan and cover with water.
- Bring to a boil and reduce heat to a simmer.
- Cook limes till soft, about 20 min.
- Cold and dice.
- Combine with all remaining ingredients.
- Store in refrigerator.
- Serve at room temperature.
