Tinklee's Huckleberry shine

  1. Mash the berries up, and place in a large stock pot, add water, sugar, and lemon zest, with a lid on, bring to a boil, then simmer for 45min and remove from heat, let cool to room temperature, 4hrs, do not speed this up
  2. When stock pot is room temperature, add everclear and stir in, strain through cheesecloth and pour in pint size jars makes about 5-6
