Tinklee's Huckleberry shine
- 4 cup huckleberries
- 1 1/2 cup water
- 1 1/2 cup sugar
- 1 zest of 1 lemon
- 1 1/2 cup 190 proof everclear
- Mash the berries up, and place in a large stock pot, add water, sugar, and lemon zest, with a lid on, bring to a boil, then simmer for 45min and remove from heat, let cool to room temperature, 4hrs, do not speed this up
- When stock pot is room temperature, add everclear and stir in, strain through cheesecloth and pour in pint size jars makes about 5-6
