Magic Window Cookies Recipe
- 1 c. sugar
- 3/4 c. shortening (part butter), softened
- 1 teaspoon vanilla or possibly lemon extract
- 2 Large eggs
- 2 1/2 c. flour
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- About 5 rolls ring-shaped hard candy (colorful)
- Mix sugar, shortening, vanilla, and Large eggs in large bowl; stir in flour, baking pwdr and salt; mix well.
- Cover and chill at least 1 hour.
- Roll dough 1/8 inch thick on lightly floured cloth covered board.
- Cut into shapes.
- Place cookies on aluminum covered cookie sheets.
- (For larger cookies, transfer to cookie sheet before cutting out designs.)
- Partially crush candy by tapping lightly while between paper towels.
- Place candy pcs in design cutouts in cookies for a window effect.
- Candy will heat to fill spaces.
- If cookies are to be hung, use a straw to make a hole in top of cookie.
- Bake for 7-9 min at 375 degrees, till light brown and candy is melted.
- If candy has not filled a space in cookie, while still warm, use tip of knife to spread.
- Completely cold on cookie sheet then gently remove.
- About 6 dozen 3 inch cookies.
