Baked Macaroni And Sausage
- 1 lb. sweet sausage
- 1 chopped green pepper
- 1 onion, chopped
- 1 (1 lb. 12 oz.) can crushed tomatoes
- 2 c. water
- 1 (6 oz.) can tomato paste
- 1 lb. elbow macaroni
- 1 lb. Mozzarella cheese, shredded
- 1/2 c. grated Parmesan cheese
- salt and pepper to taste
- Remove sausage meat from casings and crumble.
- In a skillet, fry sausage meat until browned.
- Add green pepper, onion, salt and pepper. Saute for 5 minutes. Do not drain.
- Stir in tomatoes, water and tomato paste. Simmer, covered, for 20 minutes. Cook and drain elbow macaroni.
- Layer elbow macaroni and Mozzarella cheese in a baking dish, ending with a layer of macaroni.
- Pour sauce over macaroni and sprinkle with Parmesan cheese.
- Bake in a 400u0b0 oven for 30 minutes or until brown and bubbly.
