Pie a La Mode Part 1
- 2 granny smith apples
- 1 ounce lemon juice
- 1 pint water
- 2 ounces unsalted butter
- 4 ounces brown sugar
- 2 ounces golden raisins
- 1 ounce walnuts
- 2 fluid ounces brandy
- 2 teaspoons cinnamon
- freshly grated nutmeg
- 1 teaspoon ground cloves
- 5 ounces all-purpose flour
- 1 tablespoon granulated sugar
- 14 teaspoon salt
- 4 ounces unsalted butter, chilled
- 2 tablespoons cold water
- Saute apples in butter 2-3 minutes.
- Add walnuts & raisins.
- Flambe with brandy.
- Add sugar and spices.
- Saute a few minutes more.
- Combine flour, sugar and salt in a robot coupe.
- Add butter and pulse until small granules form.
- Add in 1 TB of water, adding more if necessary.
- Form, wrap and refrigerate.
- After cooled roll out and fill with apples and bake in 350 oven until golden brown.
