Foil-Pan Grilled Seafood & Rice

  1. Heat grill to medium heat.
  2. Combine dressing and onions in deep 13x9-inch disposable foil pan; place on grill grate.
  3. Cook and stir 4 min.
  4. or until onions are crisp-tender.
  5. Stir in tomatoes, broth and rice.
  6. Bring to boil.
  7. Cover pan with foil.
  8. Reduce heat to low.
  9. Close lid.
  10. Grill 20 min.
  11. or until almost all the liquid is absorbed, stirring every 5 min.
  12. Meanwhile, use pulsing action to process parsley, garlic and lemon zest in food processor just until blended.
  13. Add cod to rice mixture; cook 5 min.
  14. Stir in shrimp; cook 4 to 6 min.
  15. or until cod flakes easily with fork, shrimp turn pink and rice is tender.
  16. Remove from grill.
  17. Stir in parsley mixture; top with cheese.
