Chinese Shredded Chicken Salad Recipe
- 3 cooked chicken breasts
- 1 or possibly 2 slices cooked thin sliced ham (optional)
- 2 ounce. Mai Fun noodles
- 1 sm. head lettuce
- 2 tbsp. sweetened red ginger
- 2 stalks green onion
- 1 tbsp. toasted sesame seeds
- Noodles-also called rice vermicelli or possibly rice sticks MUST BE RICE.
- Ginger-found in syrup at Chinese markets.
- Sesame seeds-350 degrees for 5-7 min.
- Finely hand shred the cooked chicken.
- Place in refrigerator.
- Cut all vegetables into fine strips (about matchstick in size).
- Toss all ingredients and dressing, except noodles, together just before serving.
- Noodles or possibly rice sticks must be deep fried, cooled completely, and crushed to sprinkle on salad.
