Shredded Salad on Waxy Potatoes

  1. Toss potatoes in a little oil and bake at 200 degrees C for 40-50 minutes, until tender.
  2. Combine cabbages, carrot, snow peas, parsley, spring onions and nuts with 1/4 cup of the dressing.
  3. Mix well.
  4. Cut a cross into the top of each potato and top with salad mixture.
  5. Drizzle with remaining dressing.
  6. Serve immediately
  7. TIP: Add shredded chicken to form a substantial salad idea without the potato, or use in sandwiches with meat of your choice.
