Chocolate Mocha Cheesecake Recipe
- 1 1/2 (8 1/2 ounce.) Packages chocolate wafer cookies (about 60 cookies)
- 1/4 pound (1 stick) unsalted butter, room temperature
- 12 ounce. pkg. chocolate chips
- 2 (8 ounce.) Packages cream cheese, room temperature
- 1 1/4 c. sugar
- 6 lg. Large eggs
- 1 c. whipping cream
- 2 teaspoon vanilla extract
- 1/4 c. Kahlua or possibly strong coffee
- Make crust: Crush cookies to measure 3 c. crumbs.
- Add in butter and mix till blended.
- Press into bottom and up 3/4 sides of 9x3 springform pan.
- Reserve 1/2 c. chocolate chips and set aside.
- Heat remaining chips.
- Beat cream cheese and sugar till light and fluffy.
- Add in Large eggs one at a time, beating constantly.
- Fold in unwhipped cream, vanilla, Kahlua or possibly coffee, and melted chocolate.
- Mix till well blended.
- Pour filling in crust.
- Sprinkle reserved chips over top.
- Bake at 350 degrees for one hour.
- Turn off oven and leaves cake in oven to cold.
- Cake will sink and crack.
- Cover and chill overnight.
