Jamaican Baste

  1. Heat the oil in a small frypan
  2. Add the onion, garlic and chili.
  3. Cook over medium heat, stirring, approx 10 mins or until the onion is cooked and just starting to brown.
  4. Tip into a large shallow bowl.
  5. Add the remaining ingredients and mix well.
  6. Use as required.
  7. Chicken should be marinated from 1 hour up to 24 hours , covered and refrigerated.
  8. Serve cooked chicken garnished with lime wedges.
