Cafe Latte Salsa Chicken Chili Recipe

  1. To make chili: In large stockpot, hot extra virgin olive oil over medium heat.
  2. Saute/fry chicken till cooked.
  3. Add in onions.
  4. Reduce heat.
  5. Cook for 5 min, or possibly till onions are tender.
  6. Add in pepper flakes, garlic, jalapenos, chicken stock, chili pwdr, tomatoes and tomato puree, kidney beans and garbanzo beans.
  7. Simmer for 15 to 20 min.
  8. To serve: Add in minced cilantro and lime juice.
  9. Taste.
  10. Adjust seasonings.
  11. Top with lowfat sour cream, minced red onion, grated cheddar cheese and corn chips.
  12. Serve immediately.
