Apple Thyme Cake

  1. Pre heat the oven to 350 degrees F and butter and flour a 9-inch layer cake tin.
  2. Cream together the butter and sugar, then add the eggs and beat until blended.
  3. Combine the flour, cornmeal, baking powder, baking soda and salt, and sift; set aside.
  4. Beat the buttermilk into the egg mixture, then fold in the sifted dry ingredients.
  5. Fold in the apple and thyme.
  6. Scrape the batter into the prepared tin.
  7. Bake for about 35 minutes, until a toothpick inserted in the centre comes out dry.
  8. Serve each wedge with whipped cream onthe side.
  9. For an optional garnish touch, cut a green apple wedge into crosswise slices with a sharp knife (which minimises browning) and arrange a few slices next to the whipped cream.
