Spinach Quinoa Breakfast Bake

  1. Preheat oven to 350.
  2. In blender, combine eggs and cottage cheese.
  3. Puree until smooth.
  4. Transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper.
  5. Spread into glass baking dish sprayed with cooking spray.
  6. Bake for 35-40 minutes or until golden brown and set.
