Cantaloupe, Sweet and Sour

  1. Peel and seed cantaloupe.
  2. Cut into bite size pieces or make melon balls.
  3. Place in a shallow bowl.
  4. Combine sugar or sugar substitue, pickling spices, vinegar and water in a small saucepan; heat to boiling, lower heat and simmer for 5 minutes.
  5. Strain over cantaloupe, toss to combine.
  6. Cover and chill for several hours or overnight to blend flavors.
  7. Serve on plates with a garnish of little bundles of watercress, if desired.
