Spicy and Sweet Stir-Fried Minced Chicken and Eggplant

  1. Chop the garlic finely.
  2. Slice the chili pepper.
  3. Cut the eggplant into 2cm cubes and soak in water for a while to eliminate bitterness.
  4. Drain well.
  5. Mix ingredients.
  6. Heat plenty of oil in a pan and cook the garlic and chili pepper until fragrant.
  7. Add the minced chicken and stir fry.
  8. Once the chicken is cooked, add the eggplant and stir fry some more.
  9. When the eggplant softens, pour the sauce from step 3 and mix.
  10. Done.
  11. It is delicious as it is, but I recommend having this with rice, mixing together as you eat.
