Spicy and Sweet Stir-Fried Minced Chicken and Eggplant
- 200 grams Minced (ground) chicken
- 2 Eggplant - small Japanese type
- 2 clove Garlic
- 2 Red chilli pepper
- 1 Vegetable oil for frying
- 3 tbsp Mirin
- 2 tbsp Miso
- 2 tbsp Sake
- 1 tbsp Sugar
- 2 tsp Doubanjiang
- Chop the garlic finely.
- Slice the chili pepper.
- Cut the eggplant into 2cm cubes and soak in water for a while to eliminate bitterness.
- Drain well.
- Mix ingredients.
- Heat plenty of oil in a pan and cook the garlic and chili pepper until fragrant.
- Add the minced chicken and stir fry.
- Once the chicken is cooked, add the eggplant and stir fry some more.
- When the eggplant softens, pour the sauce from step 3 and mix.
- Done.
- It is delicious as it is, but I recommend having this with rice, mixing together as you eat.
