Nutty Meringue Cookies

  1. Preheat oven; set to convection at 325F or For traditional (non-convection) at 350 degrees F Time: 20 to 25 minutes.
  2. In a deep mixing bowl, beat egg whites until frothy; gradually add sugar, beating until mixture is stiff and glossy.
  3. Fold in vanilla, salt, almonds and walnuts.
  4. Drop heaping teaspoons of meringue about 2 inches apart on lightly greased cookie sheets.
  5. Cook in preheated convection oven at 325F for 20 minutes.
  6. Let cookies cool completely on sheets; remove with spatula.
