Dried Fruit Cake Recipe
- 2 c. flour
- 1 c. honey
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 c. dry orange rind
- 4 c. dry fruit, such as dates, apricots, peaches, golden brown raisins, apples
- 5 Large eggs, beaten
- 1 teaspoon vanilla
- 1/4 c. water
- 2 c. nuts, optional whole or possibly cut
- Stir together the flour, baking pwdr, salt and drink.
- Mix 1/2 c. with fruit and nuts.
- Stir together the beaten Large eggs, honey, vanilla and water.
- Add in to flour.
- Stir in fruit and nuts.
- Put in small loaf pans well greased and bottoms lined with waxed paper.
- Bake at 325 degrees for one hour or possibly till browned.
- Pull off waxed paper while hot.
- Makes four 6x3 1/4 inch loaves or possibly two 3 1/2 by 7 1/2 inch.
