Kanya's Banana Blossoms Salad
- 1 banana blossoms
- 1 bunch thai mints
- 1 bunch spring onion
- 4 clove garlic
- 1 large red onion
- 1 tbsp my spicy sauce
- 1 tbsp roasted chilli paste
- 1/2 tbsp roasted chili oil
- 1/2 tsp sugar
- 1 1/2 tbsp coconut milk
- 1 oil enough to fry garlic and onion
- 1 lime to soak sliced banana blossoms
- 100 grams minced pork
- 5 shrimps ,optional
- Sliced shallots or red onion and garlic ,fry on low heat until crispy ,or sliced and add oil put in microwave for 10 mins or until golden brown ,drain the excess oil ,let it cool you will get the crispy shallots and garlic to mix in salad for great flavor :) ,set aside
- Blanc minced pork and shrimps with little salt until cook , drain and let it cool,set aside
- Prepare banana blossom,first prepare soaking water to protect the blossom sliced from blacken ,add water in the bowl,squeeze lime juice ,add some salt
- Cut the head of banana blossoms ,peels the reddish and hard one out ,use only the white one
- On runny water remove all small bunches of banana out,use only white leaves
- Finely sliced leaves
- Keep all sliced into lime water bowl ,this protect the color to stay white even leave for half an hour
- Mix the sauce ingredients in mixing bowl ,mix and taste ,adapt to your taste on this step ..more sweet ..more salty ..as you prefer ,but i like creammy,spicy ,flavorful
- Mix in the minced pork and shrimps ,add crispy shallots
- Mix all well ,this can serve in blossom leaves or in the plate topping with crispy shallots and garlic ,decorate with spring onion and some thai mints ..hope you enjoy reading or making this :)
