How to make South African Malva Pudding
- 250 g (8.8oz) self-raising flour
- 150 g (5.3oz) brown or dark sugar
- 30 g (1.1oz) butter
- 1 egg
- 1 pinch of salt
- 10 g (0.4oz) bicarb of soda
- 250 ml (8.8fl oz) whole milk
- 5 ml (0.2fl oz) vanilla essence
- 30 g (1.1oz) golden syrup
- 250 ml (8.8fl oz) double cream
- 100 g (3.5oz) butter
- 100 g (3.5oz) caster sugar
- 100 ml (3.5fl oz) water
- Mix all the pudding ingredients to form a thin batter.
- Bake in a greased oven dish (with lid or foil covering so that it doesnt burn on top) for 30-40 min on 160 degrees Celsius.
- Meanwhile, put all the sauce ingredients into a medium saucepan and heat on medium to low heat until all the ingredients are melted.
- Pour the sauce over the pudding as soon as it emerges from the oven and allow it to seep into the sponge.
- Prick with a fork if necessary to aid absorption.
- Serve with ice cream, cream or custard!
