Bistro Bagel Meatless Cheeseburger
- 6 teaspoon extra virgin olive oil
- 1/2 red onion
- 4 portobello mushroom
- 2 tablespoon balsamic vinegar
- 4 BOCA Cheeseburger Veggie Burger
- 4 small, whole wheat
- 1 pound arugula
- 4 , 8-oz. container
- 1 pound strawberries
- Place measured amount of olive oil in medium nonstick skillet; slice onions and add to skillet.
- Cook and stir on medium heat until softened.
- Remove from skillet; do not wash skillet.
- Spray skillet with no stick cooking spray; slice mushroom and add to skillet; cook, turning occasionally until lightly browned.
- Stir in cooked onion and vinegar.
- Heat meatless cheeseburgers as directed on package.
- Split bagels and top with meatless cheeseburger, arugula (several leaves), and mushroom/onion mixture.
- Season with freshly ground pepper if you desire.
- Top a carton of yogurt with sliced strawberries (1 pound = 24 large berries).
