Bistro Bagel Meatless Cheeseburger

  1. Place measured amount of olive oil in medium nonstick skillet; slice onions and add to skillet.
  2. Cook and stir on medium heat until softened.
  3. Remove from skillet; do not wash skillet.
  4. Spray skillet with no stick cooking spray; slice mushroom and add to skillet; cook, turning occasionally until lightly browned.
  5. Stir in cooked onion and vinegar.
  6. Heat meatless cheeseburgers as directed on package.
  7. Split bagels and top with meatless cheeseburger, arugula (several leaves), and mushroom/onion mixture.
  8. Season with freshly ground pepper if you desire.
  9. Top a carton of yogurt with sliced strawberries (1 pound = 24 large berries).
