Berry Apple Fantasy Pie

  1. Prepare pie crust pastry and separate into two balls.
  2. On lightly floured surface roll out one into a 12-inch circle.
  3. Transfer the rolled out pastry onto a 9 inch pie plate.
  4. In large mixing bowl, stir together sugar, tapioca, and cinnamon.
  5. Add the berries and apple slices.
  6. Toss gently until coated.
  7. Let stand 15 minutes.
  8. Sppon filling into pastry-lined pie plate.
  9. Dot with butter.
  10. Trim pastry even with edge of the pie plate.
  11. Moisten the edge of the pastry with water.
  12. Roll out remaining pastry into a 12-inch circle.
  13. Cut slits to let steam escape.
  14. Place pastry over the filling.
  15. Trim the top crust to 1/2 inch beyond the edge of the pie plate.
  16. Fold top pastry and crimp edge.
  17. Cover edge of crust with foil to prevent overbrowning.
  18. Bake in a 375F oven for 25 minutes.
  19. Remove the foil and bake 20-25 additional minutes.
  20. Should be golden brown with bubbly filling.
  21. Cool on a rack.
