Szechuan Chili Oil

  1. FIRST POT BOILING OIL
  2. in a pot heat oil up and put ginger , dried chili , shallot and spring onion fry till golden brown then remove from heat set aside
  3. 2nd pot
  4. in another pot lightly toast chili powder with sezechuan peppercorn till pop the off heat and pour the FIRST POT BOILING OIL and stir gently
  5. Keep all the ingredients in the chili oil for 3 days as it is
  6. after 3 days filter the oil and it's ready to be use
