Szechuan Chili Oil
- 50 grams pre soak dried chili pepper
- 20 grams sliced ginger
- 25 grams sliced shallot
- 20 grams spring onions
- 300 ml vegetable oil
- 50 grams Chili powder
- 15 grams Szechuan peppercorn
- FIRST POT BOILING OIL
- in a pot heat oil up and put ginger , dried chili , shallot and spring onion fry till golden brown then remove from heat set aside
- 2nd pot
- in another pot lightly toast chili powder with sezechuan peppercorn till pop the off heat and pour the FIRST POT BOILING OIL and stir gently
- Keep all the ingredients in the chili oil for 3 days as it is
- after 3 days filter the oil and it's ready to be use
