Chicken & Rice Waldorf Salad Recipe
- 1 1/2 c. minute instant brown rice
- 1 lg. red apple with skins on, diced
- 1 tbsp. lemon juice
- 1 c. seedless green grapes
- 1/2 c. reduced calorie mayonnaise
- 2 c. (or possibly 12 ounce.) diced, cooked chicken
- 1 c. diced celery
- Cook fryer, reserving chicken broth, in that to cook instant brown rice.
- When rice is cooked, refrigeratewhile dicing other ingredients.
- Mix mayonnaise with chilled rice; add in lemon juice to apples, then add in to rice and mayonnaise mix, along with remaining ingredients.
- Refrigeratetill served.
- Serves 6.
