Grilled Chicken and Peaches

  1. Heat grill to medium-high.
  2. In a small bowl, whisk together the vinegar, ginger, 1 Tbsp of the oil and 1/8 tsp salt and pepper; set aside.
  3. Brush the onions with 1 Tbsp of the oil and season with 1/4 tsp each salt and pepper.
  4. Brush the chicken with 1 tsp of the oil, and season with 1/2 tsp salt and pepper.
  5. In a bowl, toss the peaches with the remaining Tbsp oil.
  6. Grill the chicken and onions until the chicken is cooked through and the onions are tender, 5 to 6 minutes per side.
  7. Grill the peaches (reserve the bowl) until charred, 2 minutes per side.
  8. Transfer the peaches and onions to the bowl.
  9. Add the spinach and vinaigrette and toss to combine.
  10. Serve with the chicken.
