Creamy Tomato Onion Soup
- 3/4 cup onions chopped
- 3 tablespoons chicken broth de-flated
- 2 cups tomatoes fresh, pureed
- 1 teaspoon basil sweet
- 1 medium garlic cloves pressed
- 1/4 teaspoon black pepper coarsely ground
- 10 1/2 ounces silken tofu drained
- In a medium saucepan, saute onions in chicken stock until transparent.
- Add pureed tomatoes along with next three ingredients.
- Simmer for 10 to 15 minutes.
- In a blender or a food processor, process tofu until smooth and stir into the tomato mixture.
- Simmer and serve hot.
