Easy Ham and Potato Casserole
- 4 red potatoes, well scrubbed and sliced (not necessary to peel)
- 2 red onions, finely chopped
- 1 12 lbs cubed ham
- 1 (10 ounce) can condensed cream of celery soup, diluted according to can directions
- 2 tablespoons flour
- 2 -4 ounces grated cheese, of choice (optional)
- Combine all ingredients except cheese in a 3-1/2 quart crockpot.
- Add salt and pepper to taste.
- Cover and cook on LO heat for 8 hours.
- If you wish to top with cheese, do so at the end of the cooking time.
- Recover the crockpot and wait until cheese gets melty.
