Cheesy Veggie Casserole
- 1 1/2 stick butter
- 1 1/2 cup chopped onion
- 1 1/2 cup chopped celery
- 2 1/2 cup fresh broccoli florets
- 2 cup fresh cauliflower florets
- 1 can cream of mushroom soup
- 1 can cheddar cheese soup
- 4 oz cream cheese ( half block)
- 2 cup chopped fresh spinach
- 3 cup rice ( I used leftover, precooked. Can use uncooked)
- 1 1/2 cup shredded cheddar cheese
- 1 1/2 cup shredded mozzarella cheese
- 1 cup milk
- 1 pepper to taste
- 1 panko bread crumbs
- 1 shredded cheese
- 1 a few slabs of butter on top
- preheat oven to 350 degrees
- in large pan on med-low heat, warm butter, celery, and onion until softened
- add broccoli and cauliflower to pan
- add both cans of soup and cream cheese to heated mixture
- transfer mixture to large mixing bowl.
- Add spinach, rice, cheese, milk, and pepper
- mix well.
- pour into 13x9 in.
- casserole dish.
- Top with toppings if desired.
- bake for 25-30 minutes uncovered
