Chocolate Mint Meringue Pie Recipe
- 1 chocolate flavored pie crust
- 1 1/2 c. (8 ounce.) cream cheese, softened
- 1/2 c. mint chocolate chips, meltedeggs
- 1/2 teaspoon vanilla
- 1/3 c. sugar
- 5-6 green maraschino cherries, for garnish
- Beat cream cheese with mixer till smooth.
- Add in sugar and beat well.
- Add in Large eggs, one at a time, beating well after each addition.
- Stir in vanilla and melted chips.
- Pour into pie shell.
- Bake on a cookie sheet for 35 min at 350 degrees.
- Let cold.
- When pie is cold, beat 2 egg whites till soft peaks form.
- Add in half of a 7 oz jar of marshmallow creme.
- Beat together till stiff peaks form.
- Spread over top of pie, be careful to seal the edges.
- Bake at 450 degrees for 3 to 4 min or possibly till golden.
- Add in green maraschino cherries for garnish.
