Cottage Cheese Zucchini Casserole
- 2 lb. zucchini, sliced
- 1 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup sliced mushrooms
- 1 clove garlic, minced
- 2 Tbsp. oil
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 2 cups KRAFT Shredded Sharp Cheddar Cheese
- 3 eggs, beaten
- 2 Tbsp. flour
- 2 Tbsp. Italian seasoning
- 1/2 tsp. salt
- Cook and stir zucchini, onions, mushrooms and garlic in oil in large skillet on medium-high heat 5 minutes.
- Drain in colander; set aside.
- Mix remaining ingredients in large bowl.
- Stir in vegetable mixture.
- Pour into greased 12x8-inch baking dish or 2-1/2-quart casserole.
- Bake at 350F for 45 minutes or until knife inserted in center comes out clean.
