Apple Nut Spread

  1. Place sherry in 1 quart glass measure.
  2. Microwave at high for 45 seconds to 1 minute or until boiling.
  3. Add apples and dates.
  4. Cover with plastic wrap and vent.
  5. Microwave on high 4 to 5 minutes or until tender, stirring after 2 minutes cool mixture completely.
  6. Position knife in food processor.
  7. Add apple mixture.
  8. Process until smooth.
  9. Place mixture in a bowl and set aside.
  10. Place cottage cheese in processor and process until smooth.
  11. Add cream cheese and cinnamon; process until smooth.
  12. Add apple mixture and process until smooth.
  13. Place mixture in a bowl and stir in almonds.
  14. Cover and chill.
  15. Serve spread with toasted raisin bread or apple slices.
