Apple Nut Spread
- 2 tablespoons cream sherry
- 4 1/2 cups apples peeled and thinly sliced, about 1 pound
- 13 cup dates pitted and chopped
- 1/2 cup cottage cheese (low-fat 1%)
- 1/4 cup cream cheese (reduced-fat)
- 1/2 teaspoon cinnamon
- 2 tablespoons almonds toasted, chopped
- Place sherry in 1 quart glass measure.
- Microwave at high for 45 seconds to 1 minute or until boiling.
- Add apples and dates.
- Cover with plastic wrap and vent.
- Microwave on high 4 to 5 minutes or until tender, stirring after 2 minutes cool mixture completely.
- Position knife in food processor.
- Add apple mixture.
- Process until smooth.
- Place mixture in a bowl and set aside.
- Place cottage cheese in processor and process until smooth.
- Add cream cheese and cinnamon; process until smooth.
- Add apple mixture and process until smooth.
- Place mixture in a bowl and stir in almonds.
- Cover and chill.
- Serve spread with toasted raisin bread or apple slices.
