Orzo with Clams, Zucchini and Lemon
- 1 box orzo (rice-shape pasta)
- 2 medium zucchini
- 1 can condensed cream of celery soup
- 1 c. water
- 1/2 c. milk
- 2 can minced clams
- 2 tbsp. fresh lemon juice
- 1/2 c. freshly grated Parmesan cheese
- Freshly ground black pepper
- Bring a large saucepan of lightly salted water to a boil.
- Add orzo and cook, stirring occasionally, 4 minutes.
- Stir in zucchini and cook 3 minutes or until zucchini and orzo are tender.
- Drain in a colander; return to pot.
- Meanwhile whisk soup, water and milk in a medium saucepan until blended.
- Bring to a boil.
- Stir in clams and lemon juice and heat through.
- Pour over pasta and mix well.
- Sprinkle with cheese and pepper; stir to mix and coat.
- Serve in shallow bowls.
