Apple-Cheddar Soup

  1. In large saucepan cook onion in hot butter over medium heat until tender.
  2. Stir in potatoes, cider, thyme, salt, and cayenne pepper.
  3. bring to a boil, then reduce heat.
  4. Simmer, covered, 15 minutes.
  5. Add chopped apple; simmer covered 5 minutes or until potatoes are tender.
  6. In a small bowl combine milk and flour and stir into soup.
  7. Cook and stir until bubbly.
  8. Slowly add cheese and whisk until cheese is melted.
  9. Divide soup among serving bowls: top with apple slices and peppercorns.
