Double Banana Streusel Cake
- 1 cup banana nut whole grain cereal flakes
- 1/2 cup firmly packed brown sugar
- 1 tsp. ground cinnamon
- 1 pkg. (2-layer size) banana cake mix
- 4 eggs
- 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/2 cup oil
- 1 cup sifted powdered sugar
- 2 Tbsp. milk
- Preheat oven to 350F.
- Mix cereal, brown sugar and cinnamon; set aside.
- Beat cake mix, eggs, sour cream and oil in large bowl with electric mixer on low speed just to moisten, scraping side of bowl often.
- Beat on medium speed 4 minutes.
- Pour 1/3 of the batter into greased and floured 12-cup fluted tube pan or 10-inch tube pan.
- Sprinkle with 1/3 of the cereal mixture.
- Repeat layers twice, ending with cereal mixture.
- Bake 50 to 55 minutes or until cake tester inserted in center comes out clean.
- Cool 15 minutes in pan on wire rack; remove from pan.
- Cool completely on wire rack.
- Mix powdered sugar and 1 Tbsp.
- of the milk until well blended.
- Add additional milk, 1 tsp.
- at a time, until glaze is smooth and of drizzling consistency.
- Drizzle over cake.
- Garnish with additional cereal if desired.
