Sweet Potatoe Tomato-Crasin Relish
- 14 cup pine nuts
- 3 medium sweet potatoes, peeled and diced
- 3 medium tomatoes, cored and diced
- 12 cup craisins
- 14 cup roughly chopped mint
- 14 cup lemon juice
- 14 cup extra-virgin olive oil
- 1 teaspoon cinnamon
- 1 tablespoon sugar
- salt & freshly ground black pepper
- Preheat oven to 350.
- On a shee pan roast the pine nuts until golden brown, about 7 minutes.
- let pine nuts cool.
- In a small bowl, combine all ingredients.
- Mix well.
- Cover and refrigerate.
