Herb-Roasted Turkey & Vegetables
- 1-1/2 cups Miracle Whip Calorie-Wise Spread
- 1-1/2 cups fresh oregano, chopped, divided
- 1-1/2 cups fresh parsley, chopped, divided
- 6 each boneless skinless turkey breasts (1 lb./450 g each)
- 4-1/2 qt. baby carrots
- 3-3/4 qt. new potatoes, halved King Sooper's 5 lb For $1.88 thru 02/09
- 1-1/2 qt. onions, cut into wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/2 cups Kraft Calorie-Wise Zesty Italian Dressing
- Mix Miracle Whip with 1 cup plus 4 tsp.
- (270 mL) each oregano and parsley (or with 3 Tbsp.
- 45 mL each oregano and parsley for trial recipe); spread onto turkey breasts in foil-lined roasting pans.
- Toss vegetables with Italian dressing and remaining oregano and parsley; place around turkey breasts.
- Bake in 350 degrees F standard oven 1 hour or until turkeys are done (170 degrees F), stirring vegetables every 20 min.
- Remove pans from oven; tent with foil.
- Let stand 10 min.
- before slicing turkey.
- Serve turkey with vegetables.
