Mango Coconut Shado Beni Chicken
- 3 chicken breasts
- 1 mango
- 1 cup cilantro
- 2 scallions
- 2 stick thyme
- 1 tbsp ginger
- 4 clove garlic
- 1 cup coconut milk
- 2 tbsp olive oil
- 2 limes
- 1/2 scotch bobbet pepper
- 2 tbsp honey
- 1 cup water
- 1/2 tsp salt
- Blend all ingredients except chicken.
- Pour half over chicken and marinade 2 hours to overnight.
- Grill chicken at 375'F for 20-25 minutes.
- Baste with remaining heated marinade in last 3-5 minutes.
