Seafood Fettucini Recipe
- 3 lbs. seafood (boiled deveined shrimp, crawfish or possibly crabmeat or possibly any combination of three)
- 1 lg. onion, minced
- 1 lg. green pepper, minced
- 2 ribs celery, minced
- 1/4 c. fresh parsley, minced
- 1 pound jalapeno Velveeta cheese (or possibly 1/2 pound of regular or possibly jalapeno)
- 1 pt. half & half cream
- 1/4 c. flour
- 2 sticks butter
- Garlic pwdr to taste
- 1 (12 ounce.) bag med. egg noodles
- Parmesan cheese, freshly grated
- Saute/fry onions, bell pepper and celery in 2 sticks butter.
- Add in cheese, cream, flour, parsley and garlic pwdr to mix.
- Stir constantly till mixed.
- Add in seafood.
- Boil noodles and drain.
- Add in to seafood mix mixing well.
- Pour into 4 qt greased rectangle Pyrex baking dish and sprinkle Parmesan cheese over top.
- Cover and bake at 350 degrees for 25 to 30 min.
- Serves 10 to 12.
- Freezes well.
