Stir Fry Goya (Bitter Melon) and Scallops in Mayonnaise
- 1/2 Bitter melon
- 150 grams Boiled scallops (or baby scallops)
- 1 Onion
- 3 tbsp Mayonnaise
- 2 tsp soy sauce
- 1 tbsp Mirin
- 1 Salt
- 1 Vegetable oil for stir-frying
- Partially defrost the scallops and drain.
- Thinly slice the onions.
- Remove the seeds and pith from the goya.
- Slice thinly, sprinkle on salt, rub, wash, and drain (this is to remove the bitterness and scum).
- Heat oil in a pan and fry the scallops and bitter melon.
- When it is thoroughly cooked, add the ingredients and taste as you go along, adding salt if necessary.
- Then it's done.
