Cranberry-Apple Compote

  1. Whisk apple cider, corn syrup, and brown sugar in heavy large saucepan.
  2. Boil over high heat until reduced to 1 cup, about 15 minutes.
  3. Add 4 tablespoons butter; whisk until melted.
  4. Remove from heat.
  5. Melt remaining 4 tablespoons butter in heavy large skillet over medium heat.
  6. Add apple pieces; saute 2 minutes.
  7. Add cranberries and 1/2 cup sugar.
  8. Stir until cranberries begin to pop, about 2 minutes.
  9. Stir in reduced cider mixture.
  10. Boil until reduced to syrup consistency, about 6 minutes.
  11. Stir in more sugar, if desired.
  12. (Can be made 1 day ahead.
  13. Cover and refrigerate.
  14. Stir over medium heat until heated through.)
  15. Transfer compote to bowl and serve warm.
